These dishes are critiqued by Lima and a panel of judges. Judges were very honest about their opinions of student dishes.

"Oh, I almost broke my tooth!" was one of Lima's comments towards a student's seitan cutlet. Sweet dishes were Lima's least favorite. This was a chance to present the Master with one of her own recipes. If it was understood well and copied, it was highly praised. After the judging was done, everyone shared the huge variety of student cooking. A wonderous feast!
